Anouk Henrica Eijkelboom is a junior researcher at the Netherlands Comprehensive Cancer Organisation and a PhD candidate at the University of Twente. Anouk studied Nutrition and Health at Wageningen University and obtained her B.Sc. in 2017. During her bachelor she was already interested in cancer research, with the topic of her thesis being ‘Magnesium and tumor growth’. She earned her M.Sc. in Nutrition and Health from the Wageningen University, in 2019. Her thesis focused on dietary quality and colorectal tumor risk in people with Lynch syndrome, and her internship focused on alcohol intake and risk of bladder cancer recurrence.
In 2020 she started as a junior researcher at the Netherlands Comprehensive Cancer Organisation where she investigates the effect of the COVID-19 pandemic on breast cancer incidence, tumor characteristics, and treatment. In 2021 she started as a PhD candidate at the University of Twente, where she continues her research on COVID-19 and breast cancer.
